Inbound: the customer calls

Celiac and allergy questions answered from the menu

A parent calls at 4:30 to ask if the fries share a fryer with the breaded chicken. Emma answers from the allergen sheet your chef wrote, puts the celiac note on the booking, and the kitchen hears about it before the ticket prints.

When it starts

A caller asks what's gluten-free, vegan or nut-free, or what's in a dish.

What the agent does

Answers from the kitchen's allergen sheet and menu, flags shared fryers and prep, notes it on the reservation.

What your team gets

The allergy on the booking and a heads-up to the kitchen, with the caller's own words.

How it works

  1. Hears the real question

"My daughter has celiac" is a different question from "we're cutting back on bread". It asks which it is before it answers.

  2. Answers from the chef's sheet

Which dishes are gluten-free as written, which can be made without the crouton, and which share a fryer or a grill. Only what the kitchen has written down.

  3. Says what it doesn't know

If a dish isn't on the sheet, it says so and offers to have the chef call back. It never guesses at what's in a sauce.

  4. Covers the rest of the menu

Today's features, the kids' menu, corkage, the vegan options and how big the portions are, from the menu you keep current.

  5. Puts it on the booking

If they're coming in, the allergy goes on the reservation so the server asks the kitchen before the order goes in.

  6. Tells the kitchen

A severe allergy or a large table with several needs sends the chef a short text before service.

Example call

  1. CustomerHi, we're coming tomorrow at six. My son has celiac. Is there much he can eat?
  2. AI agentThanks for telling me. The steak frites, the roast chicken and the salmon are gluten-free as written, and the fries are cooked in their own fryer.
  3. CustomerOh good. What about the mushroom risotto?
  4. AI agentThe chef's sheet says the risotto stock has barley in it, so that one isn't safe for him. The kitchen can do the polenta side instead.
  5. CustomerThat's really helpful. Can you make sure the server knows?
  6. AI agentI've put celiac on your booking for tomorrow at six, under Kaur, and I'm sending Chef Daniel a note now so it's on his list before service.

After the call: The reservation for Kaur shows "celiac, 10-year-old, no risotto", the chef has a text with the same note, and the server reads it on the floor plan before taking the order.

What your team gets

  • Allergies and dietary needs on the reservation, in the guest's words
  • A text to the chef for severe allergies and big tables
  • Questions it couldn't answer from the sheet, sent for a chef callback
  • A list of the dishes guests ask about most
  • Every menu call's words searchable from the Calls list
Set up with you: The team loads your menu, features and the allergen sheet your chef signs off on, sets up a connection to your table book so notes land on the booking, and agrees with the chef who gets allergy alerts.

Questions

Will it promise a dish is safe?

It reads what your kitchen has written: gluten-free as written, can be made without, or shares a fryer. Anything the sheet doesn't cover goes to the chef. It never makes a promise the kitchen hasn't.

What happens when the menu changes?

You update the menu and allergen sheet in the portal, and every call after that uses the new one. Daily features can be added each afternoon.

Can it explain how a dish is made?

From your descriptions, yes: what's in it, how it's cooked, whether it's spicy. Deeper questions about a recipe go to the chef as a callback.
